The stuffed peppers recipe

Like the recipe for chilli candy previously published, stuffed peppers are savory and spicy aperitifs very popular on Reunion Island. For those who like spicy and spicy aperitifs, here is the recipe for stuffed peppers from Reunion Island.

Ingredients for 4 or 5 people
  • 10 to 15 large peppers. 250 g
  • 250 g of minced meat approximately. Pork, chicken, tuna, cheese ...
  • 2 pinches of cumin seeds
  • 1 C. teaspoon of turmeric
  • An inch of ginger
  • A small packet of green onions
  • Salt and pepper
  • Fresh mint or fresh coriander (cotomili)

 

 

 

 

For the donut dough:
  • 250g of flour
  • 2 pinches of salt
  • 1 sachet of baking powder (10 g)
  • 1 whole egg
  • 20 cl of very cold water

Preparation of the stuffing:

First, cut the large peppers in a leaf (cut only one side) lengthwise, then remove the seeds.
Then cut the green onions into two parts to separate the white part from the green part. Chop them finely apart.
Finely chop the mint or the fresh cilantro as well as the ginger.
In a pot, heat a can of oil over medium heat and brown the white part of the green onions for a minute or two. Then add the turmeric, cumin, salt, pepper and ginger. Let sweat for a minute then add the minced meat.

Mix everything well and cook for a few minutes without the stuffing drying out too much.
Stop cooking and add the chopped green onions, mint or finely chopped fresh cilantro. Mix.
The stuffing is ready, You can stuff the large peppers.

 

Preparation of the donut dough

Place the flour, salt and baking powder in a bowl, make a little, then add the egg.
Mix everything well, gradually adding cold water to obtain a smooth paste.

 

Frying

Heat an oil bath over high heat. Then dip a large stuffed peppers in the donut dough and place it in the hot oil. Do the same for the other large peppers.
Let them fry so that they take on a nice amber color.
Remove them in the oil and place them on paper towels.
Serve hot preferably.
