Recipe for the traditional Reunionese vanilla duck

Vanilla duck from Reunion Island is a very popular dish in Reunion. As the rougail Sausage it is a culinary specialty not to be missed during your stay at the meeting.

Ingredients. for 6 or 8 people.
  • 1 duck of 1.5 to 2 kg
  • 5 cloves of garlic.
  • 2 or 3 medium onions. 150 g approximately.
  • 4 or 5 tomatoes. 350 g approximately.
  • A branch of Thyme. 2 tbsp. coffee leaves approx.
  • 1 teaspoon of turmeric.
  • 1 teaspoon of Salt.
  • 3 or 4 tablespoon of oil
  • 2 or 3 vanilla pods

 

 

 

Preparation:

Cut the vanilla pods lengthwise and soak them in a large glass of water.
Clean and cut the duck into pieces.
Leave in the fridge time to prepare the spices.
Peel the garlic cloves and onions.
Cut the tomatoes into small cubes.
Slice the onions.

 

In a pot, heat a little oil over high heat, then add the pieces of duck and fry them well. When the duck pieces are golden brown, add the chopped onions and turmeric. Stir for a few seconds, then add the crushed mixture. Stir and brown the spices so that they take on a beautiful golden color. Then add the crushed tomatoes. Stir and melt them. The juice from the tomatoes will deglaze the meat and the spices. Then cover with hot water and pour in the water and vanilla. Simmer over low heat and covered until the sauce has reduced and the duck is cooked (Leave a base of the sauce and make sure the duck is cooked, the meat must be tender).
