Reunion Island Potato Cake Recipe

- For 8 to 10 servings Ingredients: 1 kg of sweet potato.
- 50 g of flour or cornstarch. (optional).
- 4 egg.
- 100 g of cane sugar.
- 100 g of raisins. (optional).
- A small glass of Rum. 5 to 10 cl. (optional).
- A vanilla bean.
- 50 g of butter. (or coconut oil for example)
Boil the sweet potatoes for about 30 minutes.
Let them cool, then remove the skin and mash them into a puree.
Let the grapes soak in the rum for about 15 to 20 minutes.
Cut the vanilla pods in half lengthwise.
With the tip of the knife, collect the seeds.
In a bowl, beat the eggs and mix them with the mashed sweet potatoes.
Add the flour, sugar, butter, rum raisins and vanilla seeds.
Butter the mold, add the mixture and spread the dough well.
Brush the cake with an egg yolk. (You can make gridlines with a fork on the cake like all traditional potato cakes.)
Bake at 180 ° for about 20 minutes. Then lower the temperature to 150 ° for about 30 minutes.
Let cool before unmolding.
You can serve it alone, with chocolate sauce, custard or with a fruit coulis.
