Shrimp curry recipe

Here is the recipe for the traditional Reunionese shrimp curry

Reunion Island shrimp curry is particularly in demand during the Christmas season. As chicken curry, the shrimp curry is a culinary specialty not to be missed at the meeting. After many requests, here is the recipe for Reunionese shrimp curry.

Ingredients. For 5 or 6 people.
  • Large prawns or prawns. About 1 kg.
  • 4 cloves of garlic.
  • 3 medium onions. 150 g approximately.
  • 5 or 6 tomatoes. 350 g approximately.
  • A piece of ginger. Half an inch.
  • A branch of Thyme. 2 tbsp. coffee leaves approx.
  • 1/2 level teaspoon of turmeric.
  • 1/2 teaspoon of Salt.
  • 1/2 level teaspoon of fine pepper.

 

 

 

Preparation:

First, clean and season the shrimp with salt, pepper and a few thyme leaves (you can peel them or not.). Mix well and leave in the fridge time to prepare the spices.
Peel the garlic cloves and onions.
Cut the tomatoes into small cubes.
Slice the onions.

Prepare the “crushed mixture”: crush or mix the garlic with salt, pepper, the thyme leaves and a piece of ginger. In a pot, heat a little oil over high heat and fry the shrimp lightly. Then add the chopped onions and turmeric. Stir for a minute, then add the crushed mixture.

 

 

Stir and brown the spices so that they take on a beautiful golden color.
Then add the crushed tomatoes. Stir and let them stew for about a minute, still over high heat.
Finally, cook over low heat and cover until the sauce has reduced.
