Chouchou cake recipe

After an overdose of samosas, here is the recipe for ”Raisin and rum darling cake” of Reunion Island. As the potato cake it is a must in Réunion. To taste it or for dessert, you will love it!

Ingredients for the scrunchie cake:
  • 3 scrunchies. 1 kg to 1.5 kg. (Christophine, Chayote ...)
  • 4 to 6 tbsp. tablespoon flour
  • 3 eggs
  • 50 g cane sugar
  • 60 to 100 g of raisins. (optional)
  • A small glass of Rum. 5 to 10 cl. (optional)
  • A vanilla bean
  • 1/2 sachet of yeast

 

 

 

Preparation of the darling cake:

First, let the raisins soak in the famous charrette rum from Réunion. Then cut the scrunchies in half and boil them for about 30 to 40 minutes.
Let them cool and then remove the skin.
Also remove the central fibrous part around the seed, then mash the pieces into a puree.
In a bowl, beat the eggs with the sugar then add the mashed potatoes. Mix well and add the flour, rum raisins and baking powder. Mix.

 

Cut the vanilla bean in half lengthwise and, with the tip or blade of the knife, collect the seeds and add to the mixture.
Butter the mold, add the preparation and bake the cake at 180 ° C for about 45 minutes.

    Le chouchou est aussi appelé christophine ou chayote. Wikipedia pourra vous en dire plus sur ce légume.

    j’ai trouvé votre recette sur Facebook, j’ai des chouchous en Normandie dans le jardin, j’ai donc fait le gâteau comme indiqué sur la recette, “un régal” c’est la première fois que j’en mangeais et forcément la première fois que je le faisais. J’ai donné la recette à mon voisin qui connait la Réunion et qui y retourne cette année.
